Baked Butternut Squash – Healthy Low Carb Recipes

I recently stumbled upon this delightful recipe on Instagram and just had to give it a try. Let me tell you, it did not disappoint! Healthy Low Carb Recipes

Ingredients:

  • 1 butternut squash
  • Salt and pepper, to taste
  • 1 pack fresh spinach
  • 3 Garlic pieces
  • 1 Cheese (cheddar, mozzarella, or your choice)
  • 1/2 cup chopped walnuts

Instructions:

  1. Preheat your oven to 200°C (400°F).
  2. Wash the butternut squash thoroughly, then slice it in half lengthwise. Scoop out the seeds and discard them.
  3. Season the inside of each squash half with salt and pepper.
  4. Place the squash halves on a baking sheet, cut side up, and bake in the preheated oven for about 50 minutes, or until the squash is tender when pierced with a fork.
  5. While the squash is baking, heat a bit of olive oil in a skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  6. Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Season with salt to taste.
  7. Once the squash is done baking, remove it from the oven. Use a fork to mash the flesh inside each squash half.
  8. Divide the sautéed spinach evenly between the squash halves, spreading it over the mashed squash.
  9. Add cheese over the spinach.
  10. Return the stuffed squash to the oven and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
  11. Remove the squash from the oven and sprinkle chopped walnuts over the top.
  12. Serve hot and enjoy your delicious baked butternut squash with spinach and cheese!
